15 Down, 15 to Go

I woke up feeling much more refreshed than usual today (although I wouldn’t have minded being able to sleep just a little longer). The baby slept in her crib for the first time and only got up once during the night. So I slept much more soundly. I got 8 hours of sleep, broken up into 4 hour segments. With an 11 week old baby, I could hardly ask for better than that!

I came downstairs at 6:15 and fixed myself another lovely bowl of oatmeal. Today’s mix: 1/2 cup of oats, 1/2 cup of water, 1/2 cup of unsweetened vanilla Almond Breeze, 1/2 mashed banana, dash of cinnamon, splash of vanilla, 2 tbs ground flaxseed, 1/2 sliced banana, ~1 tbs chopped walnuts, and a drizzle of SF syrup. I decided to forego the raisins today (but ended up eating some raisins later!).

Plus, I had 3/4 cup of egg whites, scrambled.

The hubby had to work all day today, so I had a relaxing, quiet day with the baby. Throughout the morning, I snacked on a few strawberries, an apple, and a 1/4 of an oh-so-ripe cantaloupe. Yummy!

I got a little creative with my lunch today. I used one of my Harvest Wheat Flat Out wraps that I bought yesterday. I spread some tomato sauce on it, and filled it with grilled chicken sprinkled with basil, spinach, and red onion. I rolled it up and baked it in the oven for a few minutes.

I probably should have baked it longer, but I got impatient. Typical. It was tasty nonetheless! šŸ™‚ And, it would have been even better with some mozzarella cheese. If only I could have dairy…

During the afternoon, I got my Shred on with Jillian Michaels. 15 days down, 15 days to go! I can definitely see a difference in my arms and legs already. I’m down about a pound already too, though my goal really isn’t to lose weight.

Since had some of my pep back today, I also rode on my bike in the basement for about 32 minutes. It felt great!

Afternoon snacks included some almonds, a bowl of Fiber One cereal, and a kiwi.

For dinner, I went with one of my favorites – turkey taco salad. Tonight’s salad had a mixture of romaine lettuce and red leaf lettuce, tomato, red onion, salsa, and 1/2 a small avocado.

Tomorrow is going to be much more hectic. I have to get out the door with the baby to go to the doctor again. Last week, I sat in the waiting room for an hour only to find out the doc was running way behind and I had to reschedule. Annoying!

  2. That wrap looks really good; I’m going to try baking mine sometime this week. I bet, if you have a toaster oven, it would be convenient to bake it in there even!!
