Almond Butter Bliss and Family Time

I stayed in bed until almost 8 today! AMAZING!

When I got up, I was starving – and definitely looking forward to having some of my new almond butter for breakfast. I stuffed myself with sprouted grain toast with almond butter and banana, 2 dates stuffed with almond butter, and scrambled eggs (1/2 cup of egg whites + 1 whole egg). Deeeeeeeeee-lish!! 😀

Around 10:30, we left the house to meet my mom for some lunch. [I forgot my camera on the way out, so no more pictures. :-(] We went to this little place that’s super cheap and tasty. They usually serve breakfast and lunch, but apparently they only serve breakfast food on Sundays now. So I had more breakfast for lunch – a little cup of oatmeal and Egg Beaters. I went with the Egg Beaters since I had already had eggs today. I didn’t need the extra cholesterol!

From there, we went straight to my dad’s house and hung out with my dad, stepmom, little bro & sis for the afternoon. We had a very early dinner (so that hubby and I could get home and put baby to bed at her usual time). My dad did an amazing rotisserie chicken on his grill. To go with it, my stepmom made roasted asparagus, mashed potatoes with roasted garlic and fresh parsley, and salad. What a dinner!!! The potatoes, garlic, parsley, and lettuce were all from their garden too.

After we got home and I put baby to bed, I got in a 38-minute ride on my Spinning bike. Then it was snack time – a few handfuls of Fiber One and an apple.

It is a muggy night tonight! Hopefully it’s not too uncomfortable to sleep!
