Laying Low

Today was very low-key, but not in a boring way. It was nice to just lay low.

I was up around 7 and headed straight for my container of oat bran! I put together a piping hot bowl of Banana Bread Oats, along with some scrambled eggs (1/2 cup of egg whites + 1 whole egg).

I got myself ready much later than usual today because I ended up laying down with baby for her nap. She has been waking up after only 30 minutes of napping so I laid down with her to encourage her to nap a little longer. She stirred quite a bit after 30 minutes, but I got her to settle down and sleep another 30 minutes. Well worth it. A rested baby is a happy baby!

My only other morning activity was a quick run to the grocery store to grab a couple essentials, like bananas! God forbid I not have my morning banana! 😉

Lunch today started with something savory…

deli chicken, roasted red pepper hummus, lettuce and hot sauce on a whole wheat tortilla

…and ended with something sweet.

I spent the afternoon just playing with baby at the house. My afternoon snacks included a chocolate brownie Clif Z Bar (LOVE this bar!!) and a smoothie.

Dinner was great tonight because it was all cooked on the grill! No clean up necessary. I made turkey burgers with grilled eggplant, squash, and mushrooms.

For 2 turkey burgers, I used:

  • 1/2 lb of extra lean ground turkey
  • 1/4 cup of oats
  • 1 egg white
  • dried minced garlic
  • pepper

They were a bit overcooked and actually a bit bland. They needed more spices. I thoroughly enjoyed my veggies though! 😀

Tonight was Biggest Loser Power Sculpt night. I do it every other day. I already feel like I’m stronger and better at the exercises after just a week or so.

I was in need of some additional fuel after my video, so I had a small banana for dessert.

I don’t spend a lot of time with friends these days (mostly because none of my good friends have kids, so they are still doing the house parties and bars late at night while I’m in bed sleeping!). But when I did spend a lot of time with friends, my eating habits were often a topic of discussion. “You eat too healthy!” “Do you ever eat sweets?”

Do your friends have similar eating habits as you? Or are you “the healthy one”?

  1. Oh yeah, I’m the healthy one for sure. Actually the “freak” of healthy eating…I take a lot of crap for it but I don’t care, I love the way I eat!

  2. I got that all 4 years of college, “don’t you ever eat anything normal” Salad isn’t food!
    My mom got that too when she was my age and told me it just people jealous that we are fit and healthy and LOVE life, so take it as a compliment and in the future those same friends will probaby come to you for healthy advice!
    Also I’m the only one in my friends circle thats married so I don’t really have friends to hang out with either so I’m with you on that too!

  3. my friends are actually all pretty healthy, so usually its all good. that dinner looks DIVINE!

  4. My girlfriends are actually super healthy but certainy do not deny themselves some splurging every so often. My boyfriend on the other hand, well – he’s another story. Let’s just say “chicken fingers and french fries” is his middle name 😉
