1 Spaghetti Squash
1/2 pound extra lean ground turkey
1 jar of your favorite healthy pasta sauce (I like Classico Fire Roasted Tomato and Garlic)
Grated parmesan cheese (optional)
Pierce the rind of the squash severals times with a knife all the way around. Microwave approximately 20 minutes, or until squash is tender (rotate halfway through). While squash is cooking, heat pasta sauce in a saucepan over medium-low heat. Brown ground turkey meat in a skillet. Add cooked meat to sauce. After removing squash from microwave, let cool 5 minutes. Cut squas in half; remove seeds. Use a fork to “twirl” out squash strands like spaghetti. Top with meat sauce and parmesan cheese (if desired).
