2 large bell peppers (any color)
1/2 lb of extra lean ground turkey
1 small onion
1 – 8 oz can of tomato sauce
1/4 cup of water
1/2 cup of cooked plain whole wheat couscous
Cut tops off peppers and set tops aside. Boil peppers for 10 minutes, or just until tender. While peppers are boiling, dice the tops of the peppers and the onion and add to skillet with ground turkey meat. Cook mixture until turkey is no longer pink. Then add the tomato sauce, water, couscous, garlic salt (to taste), pepper (to taste), and basil (to taste). Remove peppers from water; stuff with turkey mixture. Bake peppers at 35o for 20-30 minutes.
