Wilted Balsamic Spinach

Serves 2 (as a side dish)

1 bag of fresh spinach

1 tbs of olive oil

2 cloves of garlic

1 tbs of balsamic vinegar

Mince the 2 garlic cloves. Heat oil in wok or pot over medium heat. Add garlic and sautee for 2 minutes. Add spinach and mix to coat with oil. Allow spinach to wilt, stirring frequently. Reduce heat and add balsamic vinegar. Let simmer approx. 2 minutes.
