Parmesan Crusted Chicken with Italian Summer Vegetables

Serves 2

2 chicken breasts

Approx. 1/4 cup grated parmesan cheese

Italian Seasoning

Garlic Salt

Black Pepper

1 Zucchini

1 Yellow squash

1 Small onion

1 tbs olive oil

1/2 Jar of marinara sauce

In a shallow dish, mix together parmesan, italian seasoning, garlic salt, and pepper (all spices to taste). Spray chicken breasts on both sides with cooking spray. Dredge chicken in cheese mixture. Bake at 400 degrees for 40 minutes (or until juices run clear). While chicken bakes, slice zucchini and squash into rounds and thinly slice onion. Saute in olive oil until tender. Transfer veggies to bowl; stir in marinara sauce.
